SCOTTY’S ULTIMATE CHEESE BURGER ‘HACK’

INGREDIENTS:
Beef/Lamb patty
Tasty Cheese
Ciabatta, Focaccia
or Sourdough style bun
Tomatoes
Beetroot, pre-cooked
Avocado
Lettuce
Mayonnaise
Scotty’s Umami
or Chilli Crack
THE PATTIE
No problem using shop-bought burger patties for this
One, the key is to BBQ at a very high heat, start it on a
hot plate & nish on the grill to let some of the fat drain
off & get some lovely caramelized stripes going on.
THE CHEESE
Grilling the cheese is super important, I like to do this
in the oven at its max setting, get the oven super hot,
place your burger patty on a sheet of baking paper,
slice the cheese into strips and completely cover the
patty so the cheese will drip over the edges and get
really crunchy on the baking paper, once it’s grilled to
perfection, get everything, including the baking paper
out of the oven & sit it for a minute or two to let the
crispy bits solidify. Turn on the oven & quickly get the
buns in there to lightly toast using the residual heat.
THE BUN
I like to use a Ciabatta, Focaccia or Sourdough style
bun, they toast well & have crunchy & chewy crust with
a large, irregular and open crumb grain, which is also
slightly chewy.
ASSEMBLY
You’re now ready to assemble your ultimate burger creation, place the cheesy patty onto the bun base. Now it’s time for the actual ‘hack’ part of this recipe, that being a generous dollop of either Umami or Chilli Crack. Whether you like it hot & spicy or just spicy, Scotty’s Provisions has got you covered, drizzle this over the cheesy patty. Butter the top half of the bun with a decent dollop of Best Foods mayonnaise and place the sliced avocado, beetroot, tomato & a bunch of nice crunchy lettuce, next put two halves together, I like to take a sharp knife and slice the creation in two, this makes it more enjoyable for the punters to eat without getting into a total mess.
